A Tale of Two Cakes

We were invited for dinner at my sister Tracy’s last Friday night.  No special occasion; just because.   I asked her if she minded my bringing a dessert (like, really, who would mind)?  She of course said that was absolutely not necessary and I replied that I was in the mood to make something.  Make something but not have the left-overs at MY house!

Sooooo…if that’s the case, she said… (Bonus:  Left-overs would  NOT end up on my tush and thighs and belly…. you get my drift?

My mint has gone absolutely wild in my garden.  I mean, I truly have to rein it in before it engulfs everything!

This being a great week-end of not cooking for me, we were invited to my sister Lisa’s for her annual BBQ on Saturday, which coincides with her eldest’s birthday.   I didn’t tell her, but I felt like bringing a nice Strawberry Shortcake as the Quebec strawberries are still absolutely delicious!

Well… things don’t always turn out as planned… my bloody sponge cake fell apart (why I insist on doing this particular recipe, is beyond me… I get it one time out of four….)

So, when life throws you lemons… and all that jazz…

  1. Trifle is my favorite go-to recipe for “wow” desserts. I usually don’t even make the cake–I buy it, along with pudding, fruit, and preserves, and just start layering! Somebody always asks me for the recipe, and I have to laugh because all I did was pile on the layers!


    • They are seriously the best thing ever invented by “cheap” (of course I mean not wasteful) people! It has limitless possibilities for sure… pudding, pastry cream, Cool Whip, berries, jam… nothing but your imagination to block your creativity! The best one I ever made is one for my sister who left it in the fridge for 4 days before serving it… the guests swore there was booze in it! (there wasn’t… the berries had just fermented a tad!!!)


  2. How yummy! I love you creative on-the-spot thinking Dale! Yes, my life seems a bit like an unplanned trifle at times.. I have discovered that sometimes following the recipe doesn’t even help for a 4/4 attempt. I think it’s the strawberries fault, they kind of know before you do where they’d rather be!


  3. Silly me…tried to subscribed again…meaning…I’m ALREADY subscribed. Well! Chock that up to liking you twice as much as everyone else. Thing I’ll go subscribe just one more time…
